Most commercial food establishments are
required to have a Certified Supervisory Employee on staff. The two-day Food
Protection Certificate program teaches participants the basic principles of
safe food handling. It culminates in an exam that qualifies participants to
apply for state certification from the Pennsylvania Department of
Agriculture. Instructor Jenna Snider is an Environmental Protection
Specialist with the Erie County Department of Health.

thawing, cooking, hot-holding, cooling and reheating;

washing/hygiene;
